An Authentic Feast at Flim’s Thai Kitchen in the French Riviera

My trip to the French Riviera would not have been complete without taste testing the best of Flim’s Thai Kitchen! When I said I would be in the south of France on Facebook, my friend Shivani reached out. She told me I had to meet Flim, the owner of a Thai catering company. We messaged on Facebook and before I knew it I was devouring Chicken Pad Thai and Tom Yum Soup. While spending time in Flim’s kitchen, I learned that Thai chefs focus efforts on ensuring balance, detail and variety in their cooking. It’s clear he’s been cookin’ up a storm for a while based on all of this.

Flim was born and raised in Thailand and he moved to Canada when he was 19. A few years ago, he moved to the south of France where he started Flim’s Thai Kitchen. During my trip to Antibes, France, Flim became a quick friend of mine! He is very personable, easygoing and warm. So much so that he welcomed me into his home and cooked for me and another friend. I am writing this post because I want to spread the joy and love of Flim’s fresh Thai cooking with the world. He is a fantastic chef and the food is so good, I have to pass along the word 🙂

As a starter, Flim made a yummy and delightfully spicy Tom Yam soup. This soup includes: “flavors of lemongrass, galangal, kaffir lime leaves, fresh Thai chilies, and fresh lime juice, that all combine to create a healthy and soothing broth that will light up your taste buds”. As his menu description promises, I couldn’t get enough. I had to ask for seconds!

For the main entree, Flim made one of his specialty’s, Chicken Pad Thai. This wasn’t just any fried noodle dish! A truly mouth watering experience, Flim used the right portions of a number of fresh condiments (fish sauce, sugar, chili powder and finely ground peanuts) to give this very traditional dish a boost of love! He also included green onions, bean sprouts, and carrots to round out the rich flavor.
